Setting up library

when I loaded my movie folder into library it moved everything from subfolders into one huge listing how do I keep subfolders

You don’t.

You can display your library by folders. That way you will however lose most of the library management features.
Plex’ recommended way of handling these categorizations etc. is to use e.g. collections or metadata based filters like release year, decade, genre, actor, director, writer, producer, country of origin, contained audio languages, resolution, content rating…

do i need to delete current library and start over make all movies/ James bond into a collection same for other subfolders

No need for that. You can configure Plex to create those for you (using collection information from The Movie Database). Alternatively you can create those manually (e.g. by assigning a collection tag to the movies or by using the Add to option in the movie context menu.

looked at collections already has random movies. Would it be easier to delete library, then take all subfolders from main folder then reload library that will cut mess from 1600 files to 700, where it will be easier to fix names and imdb data, sorry most of our movies aren’t in correct format don’t use i , a , the, etc
