It seems like if it’s on the guide, I can add it to be recorded continually until the series ends. For example, Chicago One is coming back on 1st of Oct 2025. Is there anyway I can set this up like a month in advance?

You can only schedule recordings if they are listed in the EPG.
If it’s a series, you can schedule to record the whole series. So even if the next episode is not in the EPG yet, it will be picked up as soon as it becomes visible.
All of this relies on correct EPG contents. Unfortunately, some stations don’t publish fully-fledged program schedules. As a result, you sometimes encounter series which are listed as movies, or episodes with missing season / episode numbers.
Sometimes, recurring programmes like newscasts etc. are not marked as newly produced content but appear with ethe exact same data every day. As a result Plex considers them simple re-airings and will only record the first instance, unless you instruct it to record even repeated airings.
