I have a shared my server with a friend and they have shared their server with me. Is there any way to actually copy media from their server over to mine?
If enabled by the server owner you can download Media to certain Plex clients.
There’s no feature within Plex to download/sync content between servers. For that you might ask them to give you a read access to their server (file server)

Only the server owner is allowed to actually download.
This is an intentional restriction and won’t be changed.
