In most movies the difference between volume of voices and soundeffects are high. Volume of voices is too low - volume of sound effects too high. I would appreciate settings in plex for dynamic range to get this under control.
This has been asked for repeatedly and I think there have been attempts at incorporating it into Plex and/or other media servers. However there have been mixed or even bad results.
Back in the analog days I had, in fact still have although it is virtually unused, a device called an audio leveler. It worked by detecting and limiting spikes in audio and, for what you describe, worked very very well. As I converted to digital and started HDMI I looked for a similar device and found that many were offered. There were a BUNCH of devices that were “supposed” to do for the HDMI sound what had been done for analog but those devices really did not work well at all and Amazon finally pulled all such devices from their listings.
Many receivers and some set top boxes have those abilities and the ones in my Rokus work quite well.
It does seem that it could/should be a server feature but it seems, unless things have changed in the last couple of years, that no one wants or is able to incorporate such a feature into their server. Therefore if you want/need features like “volume limiting” you must choose the right hardware to make it happen.
Just to restate a bit: The audio “night” mode or “limiting” mode that is available on the Roku (and I believe some other devices) is the only reliable way to get the functionality you want.
Note: That “night or limiting mode” is not part of the Plex app. It is part of the Roku’s firmware.
@BeattifulCadaver Thank you for your comprehensive reply. My hardware is a Marantz NR1200 Stereo-Network-Receiver, a Google TV Stick (with Plex installed), Synology NAS DS220+ and a Samsung TV. None of these devices have Night Mode.
So, replacing the Google TV-Stick by a Roku-Stick could solve this “problem”?
The Rokus I use are Ultras. I have never used a “stick” but I believe it would be the same.
While my Rokus gives me exactly what I want from my media viewing sound reproduction I cannot guarantee that it will meet yours. I always try to suggest that you deal with a vendor that offers easy returns and order one of whatever you are considering and then test it out yourself.
I am an old guy and what is “great” for my hearing and vision may also be woefully lacking for younger people or even people my age with better sight and sound organs.
The other part is that everyone’s perceptions and expatiations are different.

That unit has DRC doesn’t it ?
Similar option on our Denon AVR and it does the job (plus I increase centre channel by +3-4 dB as well.
I had a Fire TV that has an audio Volume Leveler and Dialogue Enhancer setting that actually worked very well on my system.
It was better than the night listening mode on the Shield, for me anyway.
I think the newer Fire TV sticks have the same feature if you’re looking for something lower cost
I’m using a Shield and it does a decent job at levelling audio. The night mode in my old Panasonic TV didn’t work as well as the Shield’s.
No, it has DRC only fĂĽr DAB+ radio.
I have ordered now a Roku Express streaming device and will see if it helps.
EDIT: Yes, the Roku device is working well. Nightmode helps a lot! Thank you for your help!
