In the Sopranos, the last season, season six is split into two parts and in part 2 the episodes start over like another new season. So how do I name it to get listed properly? Thank you in advance…-Curtis
You name them like they are listed at TheTVDB, 'cause that is where Plex gets its metadata for tv shows from:

There is no “season split” in season 6.
Don’t mistake DVDs or BluRay ‘discs’ for ‘seasons’.

I don’t doubt it. People do organise their stuff differently. And it is admittedly weird that the last season has 21 episodes instead of the usual 13 that all the other seasons had.
But if you like to have Plex fetch metadata automatically for your episodes, then you have to reshuffle them to follow the order on TheTVDB.
