Check your hard drive(s), you might have one going bad, check the one that has the plex temp folder as that is what the transcoder uses.
Already done. The appdata drive shows no errors. I did do a BTRFS scrub on it with repair just to be safe, everything was reported fine. None of the data drivers are showing any errors. I may attempt to scan as well just to be on the safe side.
