If I happen to launch PLEX before the XB1 recognizes me and logs me in, then it gives me the 'requires login' screen, but after I log in, it won't reset. I have to reboot the XBOX to get it to work.
Sorry you're having trouble with this. If it happens again then you don't need to reset the XB1 - you can quit the Plex app by going to the Xbox dashboard and hitting the 'menu' button when over the Plex tile. You can the close the app from there.
Not ideal, but hopefully a little less frustrating.

I found this after posting my rant post about this.
I did not know I could quit plex.. perhaps always quitting plex when shutting down the xbox would be a better solution.
