Plex currently has some global options for subtitles that let it auto enable them when for example it is known that the audio is foreign , the subtitle is your preferred language and or enable them all the time. The problem is that much or all of my personal media never had the language set at …

Upvote, and I hope this could be expanded to set detailed subtitle options per-show (e.g. support for defaulting to signs/songs, etc…)
