I have a lot of MKV videos containing subtitle streams, many of which are forced tracks (for sections of foreign speech). Will rasplex play these (and play them automatically) without the server needing to transcode them into the video track?

Should direct play OK, have you tried?
All my Pis are currently installed elsewhere, I was planning to buy a Pi 2 for rasplex. Hence I can’t test.
So you’re saying when direct playing the client will display the correct forced subtitle track automatically? Are there in-play subtitle options like there are for XBMC? If so do they handle in-container and external subtitles alike, only transcoding if necessary?
RasPlex avoids transcoding subtitles for everything I've tried, internal and external subs. And you can cycle through the subs while playing in a few ways, I use the subtitle button on my remote (using CEC).
Great that sounds ideal, thanks both of you
