If I have subtitles, usually ASS subtitles format, on and then pause the video and switch apps and then come back into the app (video is still up, app is not reloaded), subtitles will disappear for the remainder of the video even though it is selected. The only way to have them show up is to rewind or fast forward a few seconds OR close and reopen the video. This has been a bug since I started using plex mobile for a few years and I just now am reporting it.
Because of this “fix” I enabled the “rewind 5 seconds after pause” option so that it always rewinds a bit which I guess refreshes the video and reloads the subtitle file. IDK
