It’s not uncommon for PMS to use 2-3 cores (partial of each) because of how scanning, matching, and metadata retrieval work.
What is it doing at that moment? Do you have the logs?

and this: 1.14.1.5488 is maxing out my MacBook Pro's CPU 24/7

The server app version: 1.14.1.5488-cc260c476 took full use of one core for many days with no play/transcode task run.
Plex needs multiple cores to operate normally. At bare minimum, it needs two.

Of importance is whether or not you asked it to create image thumbnails or chapter thumbnails. If you have done this , it might take a few days of a single core depending on the processor speed.
To disable this, Edit each library section. Go to the Advanced tab. There you will see the Thumbnails checkbox. Disable it if this is the problem.
