I think it’s fixed! I managed to stumble upon this thread which suggested Windows updates could have caused the issue so I went back and and checked and I had that same update applied. I ran another Windows update and now it appears to be working!
Note: I’m very new to plex, as in I just installed the server last week after the update broke the transcoder. lol Hopefully Plex turns out to be much more stable going forward… haha
