Just built a new high end computer with windows 10. Tired to watch Plex using Edge at first it said Server not available a few times then it started playing but now it stops every 5 to 10 minutes. Switched to Chrome and no problem. Is anyone else having an issue with Edge?
I have not been able to use the web app in Edge at all. Something to do with Edge not allowing ‘local host’ pages.
Others have reported the same with Edge - video stops after 5 minutes or so. Several threads - here’s one of them.

You can enable local host loopback in about:flags.
For the 5 minute issue, I just tried watching a video on the latest insider build and that worked without issues. RTM 10240 stopped after 5 minutes.
Gave up on Edge some time ago
