Trouble with Plex media server and Express VPN

I am not providing logs because I’m sure I know what the problem is, I just don’t understand why it is happening, if anyone feels they’d still be helpful I will produce them later on.

So my problem is that when I connect ExpressVPN, Plex breaks down, I have set the VPN to split tunneling exclusive mode (meaning only apps added to list is allowed to use VPN), and only added qBit to that list, everything else works fine, Sonarr and Radarr had some issues calling “home”, but was an easy fix with static IP.

I have set Plex to use the correct Ethernet adapter and done everything else I can think off, but as soon as I connect VPN is becomes almost completely unresponsive, oddly enough it does playback some files, but after a few minutes it crashes with a transcode error, so there is some connectivity still.

To be clear, when I activate ExpressVPN it makes a new network adapter, and it seems Plex tries to use this new adapter each time, even though I’ve set it to use adapter 1 (local network).
Either that or they create a very unexpected issue with each other, but when its off, the program is still running and Plex has no problems.

Tried to fix this for 2 days now, any suggestions would be appreciated at this point.

Update 1:

Set all firewall rules to block Plex from public network, set adapter priority to 1 on local and 20 on VPN adapter, still same issue, cant even go into settings in Plex on the server until I disconnect VPN, external users report the same issues, most videos start playing, but only for a few minutes before it crashes with a transcode error.
