I want to have a look at Plex Media Player for my Pi2. I have been running Rasplex 0.7.1 for a while and am pretty happy with it. Can I just swap out the memory card for a new one with a fresh install of PMP?
Would I be able to just swap them out as needed. I want to test out PMP but put Rasplex back on at night so my family doesn’t freak out

Yep, no problems in doing that, don’t forget to ‘Shutdown’ the RPi before pulling power.

Just download and flash a different SD card with PMP (see https://support.plex.tv/hc/en-us/articles/208050647-Getting-Started) then swap out your SD card with the one you have Rasplex on, if you find you prefer Rasplex, swap the cards back.

It was easy enough to get it up and running. However I just found out that PMP does not support the VC-1 codec for BluRay rips. I need to do some more testing with uncompressed BluRay rips that are not VC-1 encoded.
Also there is no “shutdown” function anywhere in PMP

Yes, there is.
Go back to the home screen, press ‘Return’ (at least that is the button I use on my CEC compatible remote).
If you have a USB keyboard on your Pi you can also use Esc or Backspace.
