To your first question, no, but I have to manually add that path based on how movies and music are setup. There’s no way for me to actually see that path when I go to Browse Folders.

THAT is an important point
It implies that the Plex Media Server on your Shield can indeed not see the folder (otherwise you should be able to select it and even navigate into its subfolders).
I’ve found a similar topic from some time ago where the following instruction fixed this. However this refers to a connected network drive!! Can you double check if the same options/actions exist for the USB devices as well?

THE SOLUTION:
Go to “Settings” on the Nvidia Shield TV;
Click on “Storage & reset”;
Click on “Mount network storage”;
Finally click on “Remount all shares.”

This fixed it for me with all folders then being visible.

As a test I pasted in the same path that’s used in Music to see if any albums showed up in TV Shows and they didn’t. Does the file type matter? Will it show up empty if the type is wrong, or will it show files but not allow me to play them?

Yes – a tv show library will only scan for tv shows (requiring folders to be structured properly and files named according to the Plex naming convention)
