Well my reason at this time is pretty simple. I run one server on a pretty powerful PC for most everything. However I have another Plex server running on my Shield TV with storage directly connected that is used exclusively for audiobooks.
I do not “need” two servers but having it this way allows me to listen to an audiobook while maintenance is performed on my primary server.
For others I have heard that some use multiple servers for simple redundancy so if one goes down the other(s) is available.
There is also a primitive form of load balancing where is a user shares with say 10 people but either one of two servers (both point to the same media library) can only support 5 transcoded streams so he shares server #1 with users 1-5 and the other with users 6-10.
Some users like to experiment and use one server for regular use and the other(s) for experimentation.
Then there are those (and this may be the majority of multiple server users) that have multiple servers just because they can.
