Various Artist doesn't stick

Using this article for reference, but every time I edit track Album Artist to Various Artists, it reverts back to “Mingus, Charles”
Plex Server version: 1.21.0.3711
Plex for Mac version: 1.25.0.1511-47afccd4

Thanks for the response @trumpy81.
Based on this page, it advises against using local metadata, and I have “Prefer local metadata” unchecked. All of the edits I’m making are within the Plex app.
