I’m starting to get TV Shows with voice over, I think that’s what it is called, when some ones voice describe what is happening.
How can I get rid of it ?
And by which route do you get them?

That is usually an “Audio Description” track. It’s quite rare to find, and I doubt illegitimate (don’t link to them!!!) sources would include such tracks.
But look at where you got these files, and check to see if it mentions “described audio” tracks or similar names. Maybe the acronym “DV” for “Described Video”.
If the descriptive audio is the only audio track in the file, there is nothing you or Plex can do about it.
If there are several audio tracks in there, they might be incorrectly tagged or may be muxed in the wrong order. This can be fixed with e.g. MKVtoolnix.
