Previously I could select the resolution and bitrate during playback in the web client but this is no longer present. Has the field moved moved?

Just checked this in my own setup – I can still select the quality same as before.
Do you have some content blocker or other add-ons installed in your browser that could interfere with Plex Web? You could double-check this by trying to access Plex Web using a different browser to see if it behaves in the same way.
After some tinkering I found it’s because of the “Automatically adjust quality (Beta)” option, if you have this unchecked then the quality field isn’t present when playing media. Not sure if this is a bug or intentional
I have this disabled on my server at the moment and the quality selection is showing.
I had enabled it for my quick check earlier and the option to change quality remained available… so I cannot reproduce your findings.
