What is causing high CPU usage from plex media server

I came home to my fans whirling like crazy and my CPU usage and temp both at 99% and 99C, respectively. I restarted PMS and that seemed to resolve the issue but curious what caused it to begin with. I only had one transcode (albeit, hardware transcode via GPU) at the time.
