When I open Plex Server it automatically tries to open in IE but I get a message indicating it no longer supports IE. It runs fine in Edge. How do I change the default program used to open the Plex in Edge?

You edit Edge. Set it as the default. If you don’t want edge as the default for everything, you’ll need to manually edit the options foe Edge. You’ll want the http and https protocols.
