In the plex for Windows client (also happen on the server directly and the plex.tv) in the Languages section if I select French Canadian for the audio and subtitle it default back to Abkhazian.
“French” work ok but I want “French Canadian”
Which “Languages Section” are you referring to?
There are at least 4 places with a language selector in Plex.
Make a screenshot, if possible.

Be advised though that this settings section is not used, as long as the server is signed into a plex.tv account.
(which is practically always the case, and which might be the reason why this hasn’t been reported yet)
If you use Plex regularly, the language selection in your user account are used instead (for each user account separately): https://app.plex.tv/desktop/#!/settings/account

Note that “French Canadian” is not available on the user account (I only see French).
So technically I’m stuck at the same point.
