since the latest update plex server automatically selects subtitles to play with movie or tv shows. I do not want this!
why is the plex server turning subtitles on by default?

is the checkbox ‘ticked’ ? If so, clear it.
Do the same under Settings - Server - Languages in Plex Web
edit: actually, you can leave the checkbox ticked and set the ‘Subtitle mode’ to ‘None’ instead.
If you still have trouble with this, you should mention which Plex client you are using and if you are sharing this plex account with a second person.
Check the subtitle selection on the preplay screen of your movies in Plex Web.
