Why is my PC (that is running Plex Media Server) unable to play HEVC directly?
It transodes and there is no option to Play Original on any device including the server itself.

If you are using your web browser to play the video, then Plex has to transcode HEVC. Because web browsers don’t support HEVC.
Try installing Plex Media Player (download below).
That is odd because I have the Windows 10 HEVC Video Extensions installed directly from Microsoft. I suppose you are right and I should just start using the official Windows app rather than via my web browser.

Plex also uses profiles for each client which configure what a device supposedly supports.
If your device ever transcodes something of which you’re sure it should be able to play without transcoding, you could try modifying the profile in your PMS. Be aware that this will affect all players with that particular profile though.
