Not available on Xbox One, though it seems from what I've read that it may be so on PS4.
If it is indeed the case, feature parity will kick in someday and we'll have that too.
It'd be a much appreciated addition if I may add my 2 cents...

Yeah there is a ongoing effort to reach feature parity. What exactly that will mean in regards of yellow subtitles I do not know, and I suspect no decision has been made about it just yet.
Really need this option, it would be very important for those who watch with subtitles!

I watch every single video with subtitles, and have never wanted yellow subtitles. Actually the few times that vobsubs have had yellow subtitles I have instead closed down the movie and fetched srt files so I could get white ones instead. So that statement is not true.
But what I believe to be true is that you are not alone in wanting subtitles which are yellow. I suspect it is a cultural/country specific thing. What you have grown up with, gotten used to see when watching your countries TV broadcasts perhaps? Or is it something else? Perhaps something for those who have problems with their vision?
In my country subtitles are never yellow. In Brazil maybe it is very common?
Hopefully the devs can get something in place for you so you can get subs the way you are used to.

There are several moments of a TV Shows that are passed on through reproduction information, this information is usually white, that makes reading a white subtitle becomes very difficult right.
Netflix this is resolved in a dynamic way, when it begins to appear that information simply the subtitle is located at the top center TV, however we do not have this option in Plex.
So for me I need to watch my TV Shows with subtitles yellow, but they are very important.
I guarantee you that all the people who watch TV Shows go through this problem.
Today, even though I have the Xbox One in my room, still need to leave the ATV to be able to watch my TV shows with yellow subtitles.
Now, to watch movies that was never a problem!

I watch EVERYTHING with subtitles. :)
Not only when SRT are displayed on top of credits and somesuch, my wife who was very much into ER did have a gripe about those being displayed on top of white blouses, thus rendering subtitles hard to read for her.
Same goes for every ER like shows like Grey's and so on.
It's not cultural, it's a simple matter of being able to read what's on screen.
Even more so past 45 when your eyes are reminding you that you're not aging gracefully.
Maybe Altrus you're at an age where it doesn't matter.
We once had that age.
A simple settings a la PS4 would to the trick.
I am not expecting yellow subtitles to be forced on those who'd rather have white or magenta, or whatever...

The problem is that Plex simply ignores the default settings on Apple TV and Xbox One. He does not accept what is already set to yellow subtitle.
I can watch yellow on Apple TV because I modify the file in "Plexconnect" but on Xbox One, even setting the subtitle condigurações to yellow, the plex ignores this, I miss the yellow label.
I am under 40 years of age. And it is quite possible that that is why I am loving watching a show with white text. But in Sweden a subtitle is never yellow. It is always white. The big difference is that ni this country there is a backdrop. A black bar which has an opacity on it. A little like this:

This is how I have been brought up and trained my brain.
But this is all besides the point. I am expecting you guys to get access to yellow subtitles in the future in the XB1 app. It will not happen now though.
The Samsung TV app there is a color choice of subtitle, who develops the application of tvs samsung, are they or plex tv (you)?

I really believe that adding an option to choose a yellow subtitle would be a plausible feature, considering that many subscribers plex pass not reside in countries of the English language.
