After Plex Media Server crashed (again) on my Mac mini running OS 10.15.7 (Catalina) I removed the program following the how-to and attempted a re-install. This usually sorts the problems I have out for a few weeks before having to do it again, but this time, anything I try to download to re-install gives me the error " You can’t open the application “Plex Media Server” because the Classic environment is no longer supported.".
Any suggestions that aren’t related to uninstalling properly (I know how to do it as I’ve done it three of four dozen times successfully)

What version of PMS are you trying to install and what Mac mini model is this?
“The Classic environment” used to refer to macOS’ compatibility layer to run pre-OS X applications. Keep in mind that should have gone 10+ years ago and Plex is certainly no Mac OS 9 app.
I suppose the same will occur at some point in the future when Apple fully transitioned to their own architecture (M1…) – though I doubt you have Catalina running on an M1 Mac Mini w/ Rosetta 2 disabled?!
