When I try to change my Gmail address from https://app.plex.tv/desktop#!/account, it throws " An unknown error occurred".

Have you tried in an ‘incognito’/‘privacy’ browser tab?
I’ve also been having the problem recently. Not sure what the error is. I’m moving from a different provider to gmail. I think at one point I have Google as a Linked Account, but I’ve removed that and it’s still an issue.
