Is it possible to do this? I was confused by the revised interface and accidentally sent an invite to a friend as a home user. Now they choose between my account and theirs when logging in. I don’t want that. Can I change their account to a friend or do I just need to delete their account and send it as a friend?

But removing the user from your home and re-inviting him/her should indeed do the job.
Just click the X at the end of the row of the user in your home. It will move them from home to Friends list. ( for Managed users it will delete them) I’ll ask to get that labeled so it is more obvious

Is there a way to convert a managed user to a friend? I want all of their “watched” information to carry over. Is this possible?
Unfortunately not.
I’m going to attempt 2 solutions that I found on the forum; MovieFan’s Database Tool (MovieFan's Database Tool for Plex) and a manual database edit via Reddit (https://www.reddit.com/r/PleX/comments/8ni1sr/how_to_manually_copy_watched_from_one_user_to/)
I have a managed user that doesn’t have an X to delete them, all other users do, is this a glitch, or am i missing something ?
‘Managed users’ which were created as such cannot be converted.
Only users who started out with their own plex.tv account, but were later invited into the Plex Home, can be ousted.
a managed > to users conversion, would be most welcome.
a probably common example is kids who grow up and want their own account.
while on the back it may be much more complex, the user side would be simple…
on a managed user > associate existing plex account (click link or button)
