Looks like Version 1.27.0.5897 fixed it after all – upgrading and doing the Plex Dance initially looked like it was making the same errors but letting it finish it appears to have correctly determined the episode numbers and the associated metadata. Looks solved!

In the properties of the library, on the Advanced tab: what is selected as “Episode Ordering”?

Episode Ordering is set to “TheTVDB” as the only other option there is The Movie Database.

Could you tell me which time zone is set on your server?

NAS hosting Docker is running on eastern time, Docker container has TZ set to “America/New_York”. Time in Plex server logs is accurate and in the correct timezone, I just checked to be sure.
