When setting a record to use a HD channel on the HDHomeRun I’ve noticed it is also marked as recording from the SD channel. I’ve even set the recording to record from the HD channel only, so why does it also show on the SD channel that it is recording?

its a rather annoying feature. It shows recording on all instances of that programme/series. I get it where i record something that shows up as to be recorded on SD/HD versions of the channel i set it on plus also on other channels that also carry that same programme. I think it is by design so that plex will record a series and grab the episodes from as many different channels as possible in the highest resolution available. Would prefer it though that if you select a series record on a particular channel number and in a particular resolution that it only showed it as recording on that one channel
