Per my searching there is meant to be an option in Options>Library>Advanced to disable Collections in Library view, but it appears to be missing for me.
I can still hide a Collection going through it’s individual options, but that’s tedious and I just want to hide them by default.

I’m still seeing the option … for some reason it seems to have “slipped” to the bottom of the advanced options (even below the option to delete the library):
Collections → Disabled
Try Library > Manage Library > Edit… > Advanced
For anyone like me missing “the obvious” (or who just need the visual), the three places I found the libraries Edit option, which then leads to the Advanced option as shown above by SE56:
