Whenever I start streaming, I always have to manually switch the playback setting to “play original quality”. It keeps automatically selecting a conversion

Over here at my house:
I open the app, drill into the settings - as many times as it takes to get to the Quality setting and make that ‘Maximum’ for Home Streaming.
Also disable everything that could automatically convert anything. <—careful reading of these controls is necessary. They are confusing, different in every app and may require trial and error.
If you’re in a Remote Location from the server you will, of course, need to set Remote Streaming wide open as well. In this capacity Plex will only comply if the bandwidth is available - otherwise a transcode will ensue.
There are also mobile data controls you will have to battle Plex over - Plex will take it upon itself to run the transcoder at any opportunity - unless you scour the settings for whatever it is that has the transcoder locked on. More trial and error will likely be required.
What do you mean “different in every app”? I’m only asking about the Android app. Version 7.29.2.16071 , if it helps.

I don’t have the exact app you have (maybe).
You’ll have to follow the instructions I have given and see if you can set the app’s general quality - as changing the setting every time in the playback options - doesn’t do a thing to make that the default.
The default quality setting is deep in the app’s settings - not on the playback screen. Find it set it - forget it.

typically in every app, at the top right or left, there is your initial, you click or tap or navigate on your initial then click the settings menu, which should bring up the settings page.
within the settings you should look for ‘quality’ and set the remote/local qualities to whatever is appropriate for your device/connection.
so if you always want original quality, set both remote/local to original (or maximum).
your quality can also be limited by the server, according to your upload speed and remote bitrate settings. (I think are plex pass options)
Ok yeah there’s no “original” in my settings but I just maxed it out
Some Plex apps say “Original” and some say “Maximum.” It is the same.
App Parity - being that elusive dream for Plex and a nightmare for users - the app on my phone says ‘Maximum’ while most everything else says ‘Original’.
And those are the settings I would employ - just as shown.

“Automatically adjust quality” was already switched off. Switching it off doesn’t do anything
You need to change the home and remote streaming to maximum as well. The only other reason I can think if you have a limit at the server like in Teknojunky’s screenshot above.
Which would be difficult with no Plex Pass I would imagine.
