When I install the enby server on the same synology I can choose external player:

What can I do?

You can’t stream TO DLNA clients.
If you’ve enabled the DLNA server, you can access your server FROM those DLNA clients.

I choose a track and choose an external player in the right top corner like my AV Receiver and the song is played at the receiver.

So the Emby Server is DMS an also DMC. My AV-Receiver is a DMR.
The DMC tells a DMR to play songs from the DMS.

Plex has never supported controlling a DLNA player like that

I just found out, when I use Plex on my iPhone I can connect to this and can control it from my pc

I can switch to another album and it is played on the iPhone.

so it should work in Plex, but my player are not shown in the Plex app.

No, it doesn’t.
Plex can cast/fling mainly to other Plex clients (see the support article linked by flow).
Plex doesn’t support casting to /controlling a DLNA client (as stated by BigWheel).

The Plex companion will mainly fling/cast to Plex clients. It also supports some other streaming protocols – this will depend on platform etc.; e.g. on an Apple device you should be able to stream a video from a client to AirPlay; IIRC Chromecast is also supported.
Plex however doesn’t have the capability to act as a DLNA controller.
