There’s currently no means to do that. There’s a long standing and very popular feature suggestion asking for better support of different editions/cuts of movies.
Expanding the current SD/HD version functionalityW00t first thread in here! I'll copy/paste from a thread elsewhere previously :).
What would be great is if Plex lists a movie once, but when you select it it then comes up with all the multiple different cuts that you've got in your PMS.
Similarly there’s two suggestions on improving how different quality versions are presented
The very popular “Multiple Cuts of a Movie” thread, addresses this topic in a more involved manner. However, maybe due to the complexity / intricacy of the ideas and needs to be met, five years later, the feature has not yet been implemented.
So I would like to propose, perhaps, a simpler idea using things Plex can already do.

So my mom was trying to watch Return of the Jedi the other day, and she complained that the version I have is “the one with all the stupid cartoon stuff.” Of course, I know I have both the special edition and the theatrical release, but over the phone I was unable to direct her to the right version. Ultimately I deleted the special edition from my server entirely to avoid confusion in the future, but this presents a problem.
