Disabling of Discover, Live TV and such is an account wide setting. Its valid across all clients.

Unpin On Demand and Discover on home screen

Disable all Online Media Sources in your account settings: https://app.plex.tv/desktop/#!/settings/online-media-sources Then exit the Plex Roku app. On my remote I pressed the back button until prompted with “do you want to exit..”. When relaunched, only Home and Libraries are present.
