Disable all Online Media Sources in your account settings: https://app.plex.tv/desktop/#!/settings/online-media-sources
Then exit the Plex Roku app. On my remote I pressed the back button until prompted with “do you want to exit..”. When relaunched, only Home and Libraries are present.
