PMS for Mac 1.30.1.6550
macOS 10.13.6 (High Sierra)
As always, before PMS update, (previous PMS version) PMS for Mac 1.30.1.6497 was set to Open at Login.
As always, macOS Automatic login was enabled.

As always, I manually Quit PMS for Mac 1.30.1.6497 from macOS Menu Bar > [PMS “>” Menu] > Quit.
As always, I dragged PMS for Mac 1.30.1.6550 into Applications, clicking to Replace (PMS 1.30.1.6497).
As always, I Control-Clicked [right-clicked] upon Applications > Plex Media Server.app icon, then Clicked upon Open, expecting macOS to prompt and warn me that PMS 1.30.1.6550 was a newly downloaded application (ie, macOS “quarantined”) and give me the option to Open.
Instead, that initial launching of PMS for Mac 1.30.1.6550 caused a macOS Restart.
Only after macOS restart did macOS issue the quarantine dialog box.
PMS 1.30.1.6550 then appeared to be running properly.
(I manually Restarted macOS.
PMS 1.30.1.6550 launched upon macOS automatic login and appears to be running properly.)
Not that it necessarily helps you, but I can confirm that this doesn’t happen on every installation. I just upgraded from the same previous release (1.30.1.6497) to the same new release (1.30.1.6550). I did not experience this issue. However, I’m also on Catalina (10.15.7), so it’s not exactly apples-to-apples.
Which means you’ll likely need to provide your full server logs package for Plex to have a look at. There could be some clues in there to help in diagnosing the cause of the restart. But you’ll want to collect them as soon as possible; the server rolls the logs on every restart, up to a maximum of the five previous log files.
