They’re there… Under Live TV, your server should appear by name as a tab in the guide section. I really do not like having to fish for that.

Nope, our server is NOT listed along the top as an option. We have “Hide Guide”, “Plex Channels”, “Entertainment”, “Movies”, etc… No listing/entry for our DVR server .

You can disable media by Plex for managed users in your settings, this “breaks” nothing. Just improves the UX. You can also disable Plex as a channel from the 3 dot menu.

Make sure you enable your guide sources. Click the 3 dots to the left of Live TV then go to Personalize and then go to Manage Guide Sources.
