It looks this is a recurring issue reported by users that still does not work.
Below a screenshot of the TV guide. No matter what I do or change, Plex only records the 1st part the show. Only way it allows me to record the 2nd part is to delete the show that have been recorded.
Plex will see these both as Season-4 Episode-58, even though they are Part-1 and Part-2. Plex sees the second airing as a repeat of the first airing, and so it doesn’t record it again. When you setup the recording for Part-1 you will need to go into advanced settings and add the time on to the end of the recording to cover the Part-2 show. In this case, you would enter 122 into the MINUTES AFTER END field (7:58PM - 10:00PM). You can verify the recording time scheduled by looking at the DVR SCHEDULE. It will list the starting and ending times. You will end up with one recording that covers Part-1 and Part-2. It’s always a good idea to check the DVR SCHEDULE listings to make sure it’s recording what you expect it to record. If you see the record icon in the Guide Listings, it only means that that program shows up in the scheduled recordings. It doesn’t mean necessarily that this episode is going to be recorded. That depends on how you set up the settings (New episodes only / New and Repeat / etc.) and whether or not that episode has already been recorded.
