Need Help With Remote Access Through AT&T Fiber Router

I am having nothing but trouble trying to keep my Plex Server stable through Remote Access.

I try to watch a movie on the Roku from outside my home and it inevitably cuts off. I’m trying to set up a static IP through my AT&T Fiber router and it’s like a foreign language to me. It supports port forwarding but I can’t seem to get that correct either. Any help?
