Our new router is setup exactly the same way with the same SSID and password and all devices connected automatically. Roku TVs all connected too, yet Plex on Roku TVs all read “Server Not Available”. I’ve logged out and logged back in on everything, but that did not help. And, yes, the Windows computer (with Plex Media Server on it) is on the same SSID as the Roku TVs. What could be the issue and how to resolve?

Same SSID doesn’t have same backend references (BSSID or GUID or whatever you want to call it) so not every device or app handles “same SSID” as “same network”. It’s a security function really.
You can run the test in the network settings to confirm the Roku device is connecting to the internet right at which point it’ll mostly just be getting Plex to sort itself out. You can also remove the wifi connection from the network settings on the Roku and re-add it to reset it. Particularly if any other apps\network connections are flaking out.
Try this. From the Roku Home Screen use the * button on Plex app and tell it to restart which should help “reset” the Plex app. You can also use “exit” from in Plex as well since you can still get into it. You might also want to unplug the RokuTV for 30 seconds - Roku will cache a lot of stuff and hold onto it pretty hard so sometimes the only way to fully clear it is to remove power for a bit.
That should make sure Plex isn’t trying to still use some cached routing.

Also, check your new router’s Wi-Fi settings to see if it has a setting called “AP isolation” or “client isolation” or something similar (anything isolation). Or if it’s configured as a guest network.
Such settings intentionally block clients from communicating with one another while still allowing Internet access. This would prevent the clients from being able to communicate with the server.

A new router causes Windows to switch the firewall into a stricter mode, because it assumes that the computer has been connected to a different network.
Inspect the network connection in Windows. If it’s classified as “public” now, switch it back to “private”.
Reboot Windows.
