I have a similar issue with my 2 disc copy of Avatar 2 played on Windows. At the end of disc 1 it plays the second disc but if I try to fast forward or rewind the movie ends. My solution was to join them together but this isn’t good because I have a number of movies in 2 parts.
I’ve moved your post into its own thread as it doesn’t seem related to the thread where you originally posted (aside of both threads discussing stacked files).
As for your issues… on what app are you experiencing (incl. version)?
Personally I believe this is still the best approach… among other reasons because it’ll give you the most compatible result (given not all players support stacked files to start with)

Thinking about your comments I realised that the issue isn’t with Plex but with “mpv” Doh! I found an autoload script which automatically scans a folder and now I can play multiple part videos. Apologies for wasting your time.
