Which specific beta version is playing profile 5?
I installed the most recent version, 1.27.2.5929-a806c5905, and I still get the colorspace is not supported message.
How do you get the beta on ATV? I tried installing testflight and then grabbing plex but it says the limit of installs was reached. I guess there’s a limited # of users that it allows to install beta versions?

I agree with you. I created a similar MKV file, and have similar results.
With current PMS and the latest Plex testflight tvOS app:

The MKV color banding issues on ATV and no true Dolby Vision were driving me nuts, so I bought a Nvidia Shield Pro and everything is PERFECT. EVERYTHING plays with Dolby Vision and Dolby Atmos regardless of DV Profile number/HDR/HDR10+. It’s glorious and the built in A.I. upscaling is AMAZING. It’s a shame Apple can’t do the same.
I’m now ditching KODI and will use PLEX as my one stop shop media server for both my home theater and mobile/remote needs under one unified library/database. All of this runs via a docker on UNRAID which is the best NAS you can get. PERIOD.

I borrowed a mate’s Nvidia Shield Pro and used it for a couple of months. While it played everything perfectly, the 1080P UI made text and cover art look horrendous and it cheapened the entire experience for me.
If Plex aren’t able to fix the ATV app issue, I’ll just continue to use the app on my LG TV until Nvidia put out a Shield with a true 4K UI.
They just dropped a new Apple TV version with this fix:

What’s new:
DV P5 in MKV plays on DV P5-capable devices, and looks good, but with a caveat: Plex or the Apple TV 4K put my TV into HDR mode, not DV mode. There’s no dynamic brightness. But the colors look great.
What’s the same is that:
DV P5 in MP4 that’s stored with Apple’s preferred dhv1 still works perfectly.
DV P5 in MP4 that’s stored using the more-common dvhe still doesn’t work.
So, basically nothing works like it should:
DV profile 5 videos in mkv without HDR layer put TVs into fake HDR mode, videos in mp4 don’t work at all.
DV profile 7 and 8.1 videos which are not supported by Apple TV and should play as HDR videos put TVs into fake DV mode the last time I tried playing them.
All of these work correctly in Infuse, and even the abandoned MrMC app provides better DV support since it doesn’t do fake DV and correctly switches to HDR when it should.
Does this have a negative impact on color?
I haven’t done an extensive comparison so it’s hard to say, it certainly is very strange that this bug has been around for a very long time and hasn’t been fixed. No other player does this on Apple TV as far as I know. It does affect TV settings since it has different presets for HDR and DV and switching between Cinema and Cinema Home on my LG TV while playing these fake DV files doesn’t work like it should for proper DV playback (obviously, since they are not really DV).
Plex for webOS has its own issues (no mkv DV, no DTS support) but overall provides much better support for DV playback than Apple TV. There’s this great dvmkv2mp4 script that converts most DV videos (including profile 7) to mp4s compatible with webOS (properly converting audio, subtitles and keeping the dynamic metadata). If you have a modern LG OLED TV and don’t want to switch to nVidia Shield just because of its better DV compatibility, it’s a pretty great solution.

DV 5 is indeed displaying with correct colour in some cases, however, when those files are playing they’re displaying in what I believe to be some kind of false HDR, as HDR is triggered on the TV, not DV. With a DV file that doesn’t have a Base Layer of HDR10, how is this even possible, and is it actually using the dynamic metadata of DV and just not properly triggering it?
I don’t have an Apple TV to ever test myself - but I follow DV for my own collection wherever like a dork - from what you’re explaining is how infuse did it for a while I am assuming - the color space of DV5 is known (IPTPQc2) and you can color shift/offset for it (it’s upper left leaning IIRC) and then just put the TV into HDR mode - and you have what I assume what Infuse was initially (at least) doing
There are ways to check if the actual DV parts are working- offset the RPU in a DV5 file and see if you notice RPU changes (color/tonal/brightness shifts that out of place will appear and appear obviously wrong)

Nothing’s fixed - videos either don’t play at all or play tiggering fake HDR (P5) or fake DV (P7 and P8). The only DV files that play properly are DV P5 in MP4 stored with dvh1 (very rare, most are stored with dvhe and have to be modified with mp4box or dovi_tool).
The test file does I posted in post #1?
Edit: tested the manually converted mp4 file, which does not play.
Did some more testing, the file in #1 plays now as a .ts file but my Sony TV is not put in DV mode either and after some seeking it just hangs.
“other” DV files have the issue of sound playing, but no Video output, just the loading spinner.
Tautulli says direct play (HEVC 4k Dolby Vision) but screen stays black, as described above.
Ill try to get a sample file the next days.
