Installed the Syno package (Beta) v1.21.0-3744 directly from the NAS. No guide I find matches what I see on the NAS and I never get to a point where Plex, running our of the NAS, sees the NAS as a “server”. Yes, I gave the plex user R?W access over some media folders but still I can’t get to a point of adding libraries.
Also, the NAS is running AMD Ryzen V1500B, quad-core 2.2 GHz and I do not know if I should get the package from the plex site but not sure with version should I get.

The beta is not the one to use.
The correct PMS is on plex.tv/downloads
It’s critical to read at least the first two pinned topics in NAS & Devices.
You’ll find the Plex Website Articles are the user manual,
where they have a good article about how to uninstall PMS.
Always with Synology devices check the pinned FAQ because DSM is unique.

As a newbi, I will follow your lead. Thanks.
But, the packages to choose for Synology DSM 7, are: Intel (not for me) and ARMs, 7 and 8. I have AMD and a Ds1621+. Non of the two are listed. So, am I doomed or just wrong?
Because your DS 1621+ is on the NAS compatibility list that lists it as an x64,
I’ll hedge your Ryzen is Intel-64bit compatible.
You want to use the Intel package. I agree that’s not clear, but the Intel package is for x86 (32 bit) or x64 (64 bit) systems respectively.

This is the 64 bit Intel package (AMD uses the Intel instruction set)

Please be careful with abbreviations. “x86” often refers to 32-bit Intel where “x64” refers to 64-bit Intel.
It comes from the initial battles involving the term “x86_64” which has evolved to “x64”
