Plex on Amazon Fire Stick can't play 1080p films

I have a Plex installed on an Amazon Fire Stick 4K Max that I use to watch films stored on my local Plex Media Server. It was working fine for a couple of months but recently I’m unable to play 1080p films, after about a minute I get an error saying “The server is not powerful enough to convert video”. However, I’m able to play 4K films perfectly (so I’m confused).

I’ve tried it with several different 1080p films and have the same issue. The films aren’t the problem as I’m able to use the Plex app within the TV to watch them with no issues (though the TV Plex app doesn’t allow 4K films, hence the Fire Stick).

When I get the error I’ve checked the CPU usage of my NAS and it’s minimal, so not sure why I’m getting the error. I have also tried reinstalling the Plex app on Fire Stick and have also restored Fire Stick to factory settings with no luck.
