And every time i add new media, Plex doesn’t show them until hours later.

Make certain DEBUG logging is enabled, VERBOSE logging is disabled.

also, I just noticed plex seems to be stuck scanning, I tried to cancel the scan and it seems to just ignore my command.
Disable verbose logging in Settings → Server_Name → General.
Did you change the transcoder temp directory (Settings → Transcoder)?
If so, suggest you change back to the default, which is blank.

Also, it looks like you’ve exceeded the number of folders Plex can monitor.

This is common and easy to remedy. See Synology FAQ #16 for details.
There is also one permissions error in the log files. Make sure the system internal user PlexMediaServer has at least read-only access to your media directories.

Go to Settings → Transcoder.
Is anything listed in the box for Transcoder temporary directory?
If so, delete it and save changes.
But your problem about not adding media is due to exceeding the number of folders Linux can monitor. The FAQ details the procedure to correct things.
ok that I weird I never added a directory for the transcoder. I removed and saved.
how do I fix the permission for this single movie?
I dont understand the steps, I have 9117 folders in total, I did all the math but I am getting a huge number.

If you plan on adding music or photos, use a value of 65536.
If you plan on adding just movies and television episodes, use a value of 32768.
Keep the Scheduled Task you create so that you can later edit the value and increase it if needed.
To fix the permissions of a single file:
Right click on it → Properties → Permissions.
If you don’t see PlexMediaServer, click Create then select and add it (R/W)
thank I think I got the folder part fixed to allow more folders.
how can I open the logs on my Mac to view them?
also in plex in the movies, it shows I have 5704 movies, and if I look in synology in the movies folder it shows I have 5705 movies, and in plex in folder view it shows 5705 folders, something isnt adding up.
Which logs do you want to look at?
Server logs are exported (downloaded) from it -
Settings - Server - troubleshooting - download logs
The ZIP file it presents you contains all the logs
As for the discrepancy, it sounds like one of your titles didn’t match
Well I just want to know how you found the errors, so I can learn on my own and not have to ask for help.
Download the logs from Settings → Troubleshooting.
You’ll have a ZIP file with many files inside.
The messages I mentioned came from one of the Plex Media Server.log files. Plex Media Server.log contains the most recent information. It rolls over to the .1.log to .5.log (oldest).
Some messages are straightforward, such as the ones about the transcoder directory or directory permissions.
Others not so much, such as the Notify error about the number of directories. The message makes it appear you’re out of space, when in reality you’re just hitting a Linux system limit.
