I wake up in the morning and the server isn’t running. I have to manually start it.
Started roughly 2 weeks ago. I can’t remember if anything changed around that time.
Server Version#: 1.16.0.1364-da192ff7
Player Version#:
Mac OS 10.15.6

That is not the server version. That’s the current version of Plex for Windows.
You’ll need to pull log files that cover the time the server stopped working.
Someone familiar with running Plex Media Server on a Mac can take a look and hopefully find out what is happening.
See this support article for details on configuring PMS for debug logs and pulling the log files:
https://support.plex.tv/articles/201643703-reporting-issues-with-plex-media-server/
look under settings -> server -> General (not Settings Plex for Mac/Win -> General
Sorry Plex server. 1.19.5.3112-b23ab3896

It looks like you are a victim of what seems like a memory leak as well. We are discussing this here and here.
FYI, you’ve a bad netmask for allowed networks. Use 192.168.1.0/24 or 192.168.1.0/255.255.255.0.

Thanks
Thanks, I’ve turned off auto scanning for now. I’ll see what that does.
Auto scanning should not invoke the issue you have explained. Then again I’m running the latest Beta. A few weeks ago i did notice a memory issue when the DVR was refreshing the EPG, it was very rapid Memory leak. I also use Memory Diag app with a auto Recycle limit 1000MB, so it prevents a problem. The DVR guide interval can be adjusted and the Enhanced guide is more intensive.
