you can still get the app from your library in the store if you want to (I saw it the other day). That said, given the UWP app has not seen any updates in the last 2.5 years, I wouldn’t hold get my hopes up in getting any updates.
Please bring back Touch and Big Screen in the Windows player.
I know statistics show low usage of Touch on Windows devices, but I am convinced those numbers are skewed: Many Windows Touch devices (Surfaces, tablets, laptops) are used to sync and play offline (in planes, trains, hotel rooms) with internet connection (most don’t even have a SIM card). So those hours probably don’t show up in your numbers.

The current Plex Player is missing most of the media integration with Windows. The main missing items include the taskbar overlay icons that allow for quick play/pause, next, & previous. Both Plexamp and the old PMP in the Windows Store supported these. Also requested here . Official Windows documentation appears to be here .
