This has been happening for some time. I have upgraded the Plex server and it makes no difference. I see where others have gone back to an older version of the Plex server and the crashing stops. I am on a Windows 7 Pro box that only holds media and files.
Is there somewhere I can get previous versions of Plex server? I have a lifetime subscription.
I’m trying to attach two screenshots of the two errors it always throwns in event viewer, and the logs from the plex server.

I’m in the same boat as you, upgraded to Version 1.19.3.2843 and on Windows 7 pro. So far nothing to fix this except to uninstall and reinstall and don’t update past version 1.19.3.2764 or until they fix the issue.
I just upgraded to the latest version 1.19.4.2854 and so far no crashes. I believe there were coding issues involving older CPU’s. Fingers crossed, but so far so good 
Mine as well, but 6 days later it crashed again. No new updates
You may need to revert back to a previous version a few iterations back. There is a post on the version to go back to in this thread some where.
If you have been using the auto updater, it does save the versions in a folder called data (?). However, if you manually update it doesn’t save the update that you triggered manually.
My continues to work, but I don’t use plex inn a harsh environment.
Update: After two weeks I have had ZERO crashes from Plex 1.19.4.2854
